A garlicky, versatile sauce that goes with many different dishes.
Ajada - Garlic Mayonnaise
- 4-5 Cloves Garlic cloves crushed
- 1 Egg yolk room temperature
- Salt and pepper
- 1 Cup Extra virgin olive oil
- 1/2 Lemon juiced
In a warmed bowl, beat garlic with egg yolk until pale and creamy.
Add 1 teaspoon of water, season with salt and pepper, ad gradually ad oil whil beating vigorously. Start with a few drops and then in a thin steam of oil.
Once sauce is heavy and thick, beat in lemon juice.
