Ajlouk de Courgettes - Mashed Zucchini Salad
- 1 1/2 lbs. Zucchini
- 1/2 Lemon juiced
- 2 Tbls. Extra virgin olive oil
- 3 Garlic cloves crushed
- 1 tsp. Ground coriander
Trim, wash, and boil zucchini in salted water until soft.
Drain and press gently to remove excess water.
Chop and mash with a fork. Add rest of ingredients and mix well. Serve cold.
