Ajlouk de Potiron - Spicy Pumpkin Puree
- 1 lb. Orange pumpkin peeled and cut into pieces
- 1/2 - 1 Lemon juiced
- 2 Garlic cloves crushed
- 1/4 - 1/2 tsp. Harissa or paprika and chili pepper
- 1 tsp. Caraway seeds
- 1/2 tsp. Ground coriander
- 2 Tbls. Extra virgin olive oil
Steam or boil pumpkin in salted water for about 15 minutes, until tender.
Drain and press out water. Mash and mix well with the rest of the ingredients.
