A very savory cheese and potato pie.
Borekas de Keso - Cheese Pies
- 1 Basic pie dough
- 1 Egg yolk with 1 tsp. of water to glaze
- 3 Tbls. Sesame seeds to sprinkle - optional
- 14 oz. Poratoes mashed
- 12 oz. Feta cheese mashed
- 1/2 Cup Parmesan cheese grated
- 3 Eggs
- White pepper
Mix all filling ingredients together.
Make Basic Dough and roll out 2/3 of dough as thin as possible and line into 10 inch pie pan.
Fill with filling and cover with rest of rolled out pastry. Trim edges and pinch together to seal.
Brush with egg yolk mixture and bake in preheated 300°F (150°C) oven for 45 minutes or until golden.
