Burghul bi Banadura
Cracked Wheat with Tomatoes
- 2 lbs. Tomatoes peeled
- 6 Tbsp. Oil
- 1 tsp. Sugar
- 2 Cups Bulgur/Cracked wheat
- Salt and pepper
Blend tomatoes into a cream. It should result in about 4 cups of fluid. Add water if not.
Add blended tomatoes into a pan, add 3 tablespoons of oil and then add sugar, salt, and pepper.
Bring to a boil, stir in cracked wheat, and simmer covered for 10 minutes.
Take off heat, cover, and let sit for 10 minutes. Stir the rest of the oil in and serve.
