Stuffed Artichoke Bottoms

Ingredients
- 2 oz. Anchovy fillets about 5 small anchovies, finely chopped
- 2 Garlic cloves crushed
- 1/2 Cup Flat leafed parsley finely chopped
- 2 oz. Bread crumbs
- 6 Tbsp. Olive oil
- 2-3 Tbsp. Lemon juice
- 14 oz. Artichoke bottoms
Instructions

Mix all ingredients except artichokes into a paste.

Fill artichoke bottoms with stuffing. Place stuffed artichoke in baking dish, side by side.

Pour enough water to half cover artichokes and bake at 350°F (180°C) for 25-30 minutes, until very tender.
