Fried Zucchini Slices with Yogurt
- 1 lb. Zucchini
- Oil for frying
- 2 Tbls. Dill or mint chopped
- 1 Cup Yogurt
- Salt and pepper
Trim and cut zucchini lengthwise into 4 long slices, about 1/3 inch thick. Film frying pan with oil and fry slices quickly on high heat until brown, turning once.
Drain on paper towels. Season with salt and pepper, dress with mint or dill and serve hot with yogurt.
