Fritada de Espinaka
Spinach and Cheese Cake
- 14 oz. Spinach
- 5 Eggs
- 1 Potato boiled, peeled, and chopped
- 7 oz. Feta cheese
- 1/4 tsp. Nutmeg
- 2 Tbsp. Oil
- Salt and pepper
Wash and drain spinach. Place in large pan on low heat with lid on. Steam into a soft mass, drain, and press out excess water.
Lightly beat eggs, add potato, spinach, cheese, nutmeg, salt, and pepper and stir well.
Heat oil in frying pan, pour mixture in and cook on very low heat for 10-15 minutes until bottom is set.
Cook under broiler until firm and lightly browned.
Turn out and serve hot or cold.
