Fritada de Tomat
- 1 Potato boiled and mashed
- 4 Eggs lightly beaten
- 1/2 Cup Parmesan or kashkaval cheese grated
- 1 lb. Tomatoes peeled and chopped
- 4 Tbsp. Flat leafed parsley chopped
- Salt and pepper
Place mashed potato in bowl and beat in eggs. Add grated cheese, tomatoes, parsley, salt, and pepper. Mix well.
Pour into oiled baking dish and bake at 375°F (190°C) for about 40 minutes, until firm.
