Dried Fava Beans with Hard Boiled Eggs
- 1 lb. Egyptian dried fava beans soaked overnight
- 6 oz. Garlic cloves finely chopped
- 6 Hard boiled eggs peeled and sliced in half
- 2-3 Lemons quartered
- Salt and pepper
- Extra virgin olive oil
Drain beans and simmer with garlic in water for 1.5 hours, until tender, adding salt towards the end.
Serve hot in a bowl with hard-boiled egg, quartered in length. Pass around olive oil, salt, pepper, and lemon wedges for people to dress their own plate.
