Ispanakhi Salati - Spinach Salad with Walnuts and Pomegranate Seeds
- 1 lb. Spinach
- 1 Tbls. Vinegar
- 2 Tbls. Extra virgin olive oil
- 1 Garlic clove crushed
- 1/4 tsp. Cayenne pepper
- 2 Scallions chopped
- Coriander chopped
- Pomegranate seeds
- 5 Walnut broken up into pieces
Wash spinach and remove hard stems. Drain and squeeze excess water. Put in large pan and sprinkle with a touch of salt. Steam with lid on until it turns into a soft mass. Drain.
Mix vinegar and oil with garlic and cayenne. Dress spinach. Arrange on a flat plate, pulling spinach apart, and garnish with scallions, coriander, pomegranate seeds, and walnut pieces.
