Artichoke Bottoms Stuffed with Meat

Ingredients

  • 14 oz. Frozen artichoke bottoms about 10 artichokes
  • 1 Onion chopped
  • 2 Tbsp. Oil
  • 2 Tbsp. Pine nuts
  • 10 oz. Ground veal, lamb, or beef
  • 2 Tbsp. Flat leafed parsley finely chopped
  • Pinch Nutmeg
  • 1/2 tsp. Allspice or cinnamon
  • 1 Egg lightly beaten
  • 1/2 Lemon juiced
  • Salt and pepper

Instructions

  1. Defrost artichokes. Fry onion in oil till golden. Add pinenuts.

  2. Mix meat, parsley, salt, pepper, nutmeg, allspice or cinnamon, egg, and work to a soft paste

  3. Work onions and pine nuts in. Take lumps of meat and fill artichoke bottoms, making little mounds.

  4. Place in shallow baking dish. Mix lemon juice with 2/3 cup of water and pour into dish.

  5. Cover with foil and bake at 350°F (180°C) for 30-45 minutes, until meat is cooked through.
