Artichoke Bottoms Stuffed with Meat
Ingredients
- 14 oz. Frozen artichoke bottoms about 10 artichokes
- 1 Onion chopped
- 2 Tbsp. Oil
- 2 Tbsp. Pine nuts
- 10 oz. Ground veal, lamb, or beef
- 2 Tbsp. Flat leafed parsley finely chopped
- Pinch Nutmeg
- 1/2 tsp. Allspice or cinnamon
- 1 Egg lightly beaten
- 1/2 Lemon juiced
- Salt and pepper
Instructions

Defrost artichokes. Fry onion in oil till golden. Add pinenuts.

Mix meat, parsley, salt, pepper, nutmeg, allspice or cinnamon, egg, and work to a soft paste

Work onions and pine nuts in. Take lumps of meat and fill artichoke bottoms, making little mounds.

Place in shallow baking dish. Mix lemon juice with 2/3 cup of water and pour into dish.

Cover with foil and bake at 350°F (180°C) for 30-45 minutes, until meat is cooked through.
