Black-Eyed Pea Salad
- 1 lb. Black-eyed peas soaked for at least 60 minutes
- 1 Red onion chopped
- 2 Garlic cloves crushed
- 4 Tbls. Flat leafed parsley chopped
- 1/2 tsp. Cumin
- 5 Tbls. Extra virgin olive oil
- 1 Lemon juiced
- Salt and Pepper
Boil drained peas for 20 minutes or until tender. Season with salt at the end.
Drain and add the rest of the ingredients together. Mix well.
