Marcoude de Pommes
- 2 lbs. Potatoes
- 2 Onions coarsely chopped
- 4 Tbsp. Oil
- 4 Garlic cloves minced
- 6 Eggs lightly beaten
- 1 tsp. Turmeric
- 1/2 Lemon juiced
- 1/2 Cup Flat leafed parsley chopped
- Salt and pepper
Boil potatoes til soft, then peel and mash.
Fry onions in oil till soft and slightly golden. Add garlic and fry for a few minutes
Mix mashed potatoes with onions and garlic - beat in eggs.
Add salt, pepper, turmeric, lemon juice, and parsley and mix well.
Grease baking dish and pour in omelette mixture.
Bake at 425°F (220°C) for 45 minutes, until set.
