An Israelian classic, this simple salad is perfect for the summer.
Mixed Israeli Salad
- 2 Bibb Lettuces
- 2 Tomatoes
- 1 Cucumber peeled
- 1 Green bell pepper seeds removed
- 1 1/2 Mild red onions or scallions chopped
- 3 Tbls. Flat leafed parsley chopped
- 5 Tbls. Extra virgin olive oil
- 1 Lemon juiced
- Salt and Pepper
Cut all vegetables into very small pieces and put into bowl. Just before serving, dress with oil, lemon juice, and salt and peppper to taste.
