Spiced Spinach with Scrambled Eggs
- 1 1/4 lbs. Spinach washed and drained
- 1 Onion chopped
- 3 Tbsp. Oil
- 2 Garlic cloves finely chopped
- 1 inch Ginger grated or juiced
- 1/4 tsp. Turmeric
- 1/2 tsp. Cayenne or red chili powder
- 4 Eggs lightly beaten
- Salt and pepper
Fry onion in oil till soft, add garlic, ginger, turmeric, chili pepper, and stir well.
Add spinach, season with salt, and place lid on. Cook until spinach crumples into a soft mass.
Stir well and add eggs, cook stirring until softly scrambled.
