Potatoes and Tomatoes
- 2 lbs. Potatoes cut in half or quartered
- 1 lb. Tomatoes peeled and chopped
- 2 Cups Chicken stock or enough to cover potatoes
- 4 Tbsp. Extra virgin olive oil
- Salt and pepper
Put all ingredients together in a pot, cover with lid, and simmer for 30 - 40 minutes, until potatoes or tender.
Remove lid and reduce sauce.
