Pipiruchkas Reyenadas de Keso

Peppers Stuffed with Cheese

Ingredients

  • 6 Bell peppers red or yellow
  • 2 Garlic cloves
  • 2 Tbsp. Oil
  • 1 lb. Tomatoes peeled and chopped
  • 1-2 tsp. Sugar
  • 6 Slices Mozzarella or halumi
  • Salt and pepper

Instructions

  1. Roast and peel peppers. Make tomato sauce by frying garlic in oil, adding tomatoes, salt, pepper, and sugar and simmer for 15 minutes.

  2. Slip 1 slice of cheese inside each pepper, arrange side by side in baking dish, and pour tomato sauce over them. Bake at 350°F (180°C) for 20 minutes, until cheese is soft.
