Peppers Stuffed with Cheese
- 6 Bell peppers red or yellow
- 2 Garlic cloves
- 2 Tbsp. Oil
- 1 lb. Tomatoes peeled and chopped
- 1-2 tsp. Sugar
- 6 Slices Mozzarella or halumi
- Salt and pepper
Roast and peel peppers. Make tomato sauce by frying garlic in oil, adding tomatoes, salt, pepper, and sugar and simmer for 15 minutes.
Slip 1 slice of cheese inside each pepper, arrange side by side in baking dish, and pour tomato sauce over them. Bake at 350°F (180°C) for 20 minutes, until cheese is soft.
