Pommes de Terre aux Olives
Potatoes with Black Olives
- 2 lbs. Potatoes
- 1/2 tsp. Turmeric
- 4 Garlic cloves minced
- 4 Tbsp. Extra virgin olive oil
- 4 oz. Black olives
- 1/4 Cup Coriander leaves coarsely chopped
- Salt and pepper
Simmer potatoes in salted water with turmeric until tender.
Drain potatoes and put into shallow baking dish with garlic, olives, olive oil, and season with salt and pepper.
Mix very well and bake at 350°F (180°C) for 30 minutes. Serve sprinkled with coriander.
