Fried Peppers and Tomatoes with Eggs
- 2 Onions chopped
- 3 Tbsp. Oil
- 2 Green or red bell peppers seeded and cut in small pieces
- 1 Chli pepper seeded and thinly sliced
- 4 Tomatoes peeled and chopped
- 4 Eggs
- Salt and pepper
Fry onions until golden. Add peppers and fry until soft.
Add tomatoes and simmer for 10 minutes. Crack eggs on top and cook for 3-4 minutes, until set.
