Ataif - Pancakes in Syrup
- 1 tsp. Active dry yeast
- 1 tsp. Sugar
- 1 1/2 Cups Warm water
- 1 1/3 Cups Flour
- 1 1/4 Cups Water
- 2 1/2 Cups Sugar
- 1/2 Lemon juiced
- 1 Tbls. Orange blossom or rose water
- 1/2 lb. Kaimak, clotted/heavy cream, or mascarpone
- 1 1/4 Cups Pistachios finely chopped
Dissolve yeast and sugar in 1/2 cup water and leave until it froths.
Put flour in bowl, add yeast mixture and rest of water gradually, beating vigorously to make a creamy, lump free batter.
Cover with plastic wrap and leave to rest for an hour.
Bring to boil water with sugar and lemon juice and simmer for 10 minutes. Add orange or rose water.
Grease nonstick frying pan. Pour batter by the tablespoonful, making several little rounds that don't touch. Cook over medium low heat.
As little holes form on top, turn to the other side. Drop in syrup as they are done.
