Candied Orange Peel
- 2 lbs. Orange peels
- 5 Cups Sugar
- 4 Cups Water
- 1/2 Lemon juiced
Soak peels in water for 24 hours, changing water once.
Drain and boil for 20 minutes until soft and drain again.
Roll up peel and thread them onto thick button thread with a needle, like beads on a necklace. Tie ends of thread together.
Boil sugar with water and lemon juice. Drop peels in syrup and simmer for 1 hour.
Lift peels out and place in glass jar. Once cooled, pour syrup over them.
Alternatively, roll peels in sugar and keem them crystallized in a box.
