A thick and chewy ice cream with a licorice finish.
Dondurma Kaimak - Mastic and Rose Water Ice Cream
- 4 Egg yolks
- 1/2 Cup Sugar
- 1 1/4 Cups Light cream
- 2 Tbls. Rose water or to taste
- 1 1/4 Cups Heavy cream
- 1/2 tsp. Powdered mastic
Beat egg yolks and sugar to thick pale cream in bowl.
Bring light cream to boil and gradually pour in egg mixture beating the entire time.
Put bowl in double boiler and lightly beat until mixture thickens into custard.
Add rose water and sprinkle mastic over whole surface and stir very well. Let cool.
Beat heavy cream until firm and fold into cooled custard.
Cover and freeze overnight.
