Matzo Fritters in Syrup

- 4 Eggs separated
- Pinch Salt
- 1 Lemon zested
- 6 Tbls. Matzo meal
- Oil for frying
- 3/4 Cup Sugar
- 1 1/2 Cups Water
- 3/4 Cup Honey
- 1/2 Lemon juiced
Make the syrup by combing syrup ingredients in a pan and bring to boil.
Beat eggs whites stiff. Lightly beat yolks with salt and lemon zest and fold gently into whites.
Lightly rain matzo meal on mixture and gently fold in.
Drop heaping tablespoonful in moderately hot oil and deep fry over medium heat, turning fritters over until brown all over.
Drain on paper towels and dip in syrup while hot. Let soak for 10 minutes and lift out. Serve hot or cold.
You can also just sprinkle with sugar and cinnamon and serve as is.
