Gâteau à l'Orange
- 2 Oranges
- 6 Eggs
- 1 1/4 Cups Sugar
- 2 Tbsp. Orange blossom water
- 1 tsp. Baking powder
- 1 1/2 Cups Almonds blanched, coarsely ground
Wash oranges and boil them whole for 1.5 hours, or until very soft.
Beat eggs with sugar. Add orange-blossom water, baking powder, and almonds and mix well.
Cut open oranges, remove seeds, and puree in food processor. Mix thoroughly with egg/almond mixture and pour into 9-inch cake pan that has been oiled and dusted with mazto meal or flour.
Bake in preheated 375°F (190°C) oven for 1 hour. Let cool before turning out.
