Gâteau au Coco
Moroccan Coconut Cake
- 3 Cups Dried grated coconut
- 1 Cup Fresh orange juice
- 1 1/2 Cups Sugar
- 4 Tbsp. Oil
- 6 Eggs separated
Mix dried coconut with orange juice and leave for 20 minutes, until coconut is soft.
Add sugar, oil, egg yolks, and mix well.
Beat egg whites stiff and fold into egg mixture.
Pour into greased nonstick cake pan and bake in preheated 350°F (180°C) for 45 minutes.
Turn out upside down while still warm.
