- 6 Eggs separated
- 6 Tbsp. Superfine sugar
- 1 Lemon or orange zested
- 6 Tbsp. Self rising flour
Beat egg yolks and sugar to thick, pale cream and add lemon/orange zest.
In another bowl, beat egg whites until stiff, then fold into yolk mixture.
Gradually fold in flour. Pour into a well oiled and floured nonstick 9 inch cake pan with removable bottom or a pan lined with baking parchment.
Bake in preheated 400° (200°C) oven for 40 minutes. Turn out while still warm.
