Sfenj - Orange Doughnut Rings
- 2 tsp. Dry yeast
- 1/2 Cup Orange juice plus a little extra, warmed
- 4 Tbsp. Sugar
- 3 1/3 Cups Flour
- 1 Orange zest
- 2 Eggs lightly beaten
- 4 1/2 Tbsp. Oil
- Confectioners' sugar to sprinkle
Combine 4 tablespoons of orange juice, 1 teaspoon of sugar and 2 tablespoons of flour. Beat well and leave for 25 minutes, until it froths.
In a large bowl, mix remaining flour and sugar with orange zest, eggs, and 4 tablespoons of oil. Add yeast mixture and mix well.
Add just enough orange juice to make a soft dough that holds together in a ball.
Knead for 15 minutes till elastic and no longer sticky.
Pour 1/2 tablespoon of oil in bowl and turn dough around to grease all over. Cover with plastic wrap and leave in warm place for 90 minutes, until doubled in bulk.
Punch dough down and roll out to about 1/3 inch thick. Do not use any flour.
Cut into rounds about 3 1/4 inches in diameter. Make hole in middle with finger and pull out the ring, enlarging the hole.
Leave dough rings on oiled tray for another 30 minutes to rise.
Deep fry in batches in 2 inches of oil over medium-low heat, turning over once to brown all over.
Drain on paper towels and serve dusted with confectioners' sugar or dipped in syrup.
