Minty Carrot Chicken
- 3 Onions sliced
- 3 Tbsp. Oil
- 2 Garlic cloves crushed
- 1 1/2 Inch Ginger juiced or grated
- 2 Green chilies slit and seeded
- 1 tsp. Turmeric
- 1 Chicken quartered
- 1 1/4 lbs. Carrots sliced lengthwise into 1-inch lengths
- 3 Tbsp. Mint finely chopped
Fry onions in oil till soft and golden. Add garlic, ginger, and chilies. Add turmeric and place chicken pieces. Saute for 10 minutes. Season with salt all over.
Add carrots and cover with water.
Add more salt, and cook uncovered for 15 minutes or until chicken and carrots are done and sauce is reduced. Add mint and cook for a few minutes before serving on Indian bread or rice.
