Poulet aux Pois Chiches - Chicken with Chickpeas
- 1 Onion chopped
- 3 Tbls. Oil
- 1 tsp. Turmeric
- 1 Chicken quartered
- 1 1/4 Cups Chickpeas soaked for at least 2 hours
- 1 Lemon juiced
- 2 Cardamom pods
- Salt and white pepper
Fry onion in oil until soft. Add turmeric and stir well.
Sear chicken peices until they have taken some color. Put in drained chickpeas and cover with water. Season with salt and pepper.
Add lemon juice, cardamom pods that have been slightly cracked. Bring to boil, remove scum, and simmer for about 60 minutes or until chickpeas or tender. Adjust season and serve hot on rice.
