Ferik – Whole Wheat Casserole
Young green wheat
Shoulder of lamb
cut in large pieces
Hard boiled eggs
Salt and Pepper
Wash wheat in a bowl with water and drain.
Season meat and brown meat in oil. Remove from pan and fry onions in oil on low heat until soft.
Return meat and cover with about 9 cups of water, bring to boil, and remove scum.
Add wheat, salt, pepper, cinnamon, and allspice. Place eggs on top. Cover and cook for at least 3 hours on very low heat or until meat and wheat is tender. Add more water if necessary.
