  1. In a large pot, combine stock, chickpeas, onion, tomatoes, and simmer for 60 minutes or until chickpeas are tender, seasoning with salt and pepper.
  2. While waiting, finely chop onion and chicken in a food processor. Add eggs, bread, salt, and pepper and blend into a paste. Take lumps and roll into walnut-sized little balls.
  3. Drop balls into simmer soup, add chopped apricots and simmer for 10-15 minutes. Add coriander before serving.
