This fish salad uses mango and chilies to make it bright and tasty.
Sardina - Fish and Mango Salad
- 2 lbs. Firm white fish fillets cod or haddock
- 6 Tbls. Oil
- 2-3 Mangoes chopped or diced
- 2-3 Tbls. Scallion sliced
- 1 Green chile seeded and finely chopped
- Salt and Pepper
Fry fish in 4 tablespoons of oil for 7-10 minutes or until flesh is translucent and begins to flake, turning over once.
Remove fish, let cool, and break up into flakes. Add mangoes, scallions, salt, pepper, green chile, and dress with remaining oil. Mix well and serve cold.
