Haricot Bean Stew

Overnight Soak 12 hours
Servings 6 people

Ingredients

  • 2 Onions chopped
  • 3 Tbsp. Oil
  • 3 Garlic cloves chopped
  • 1 1/2 lbs. Beef or lamb cubed
  • 1 lb. Small dry white beans soaked for 2 hour or overnight
  • 1 lb. Tomatoes peeled and chopped
  • 1 Lemon juiced
  • Salt and pepper

Instructions

  1. Fry onions in oil until golden. Add garlic and set aside. Season meat and brown all over. Return onions, garlic, and add tomatoes, beans, sugar, and cover with water.

  2. Simmer for 2-3 hours until meat and beans are tender. Add lemon juice before serving.

  3. Serve with rice.
