Burghul bi Dfeen - Meat Stew with Wheat
- 2 Onions sliced
- 5 Tbls. Oil
- 1 lb. Lamb or beef shoulder or breast cubed
- 1/2 Cup Chickpeas soaked for at least 1 hr.
- 2 Cups Cracked wheat medium, coarse grind
- Salt and Pepper
Fry onions in 2 tablespoons of oil until golden. Add meat and brown all over.
Add drained chickpeas, season with salt and pepper, cover with water, and simmer for 3-4 hours or until tender.
Add wheat and enough water to make up liquid in pan to about 4 cups.
Season again and cook for another 20 minutes or until liquid has been absorbed and wheat is tender.
Add the rest of the oil and serve sprinkled with cinnamon.
