Ftut - Yemeni Wedding Soup
- 1 lb. Fatty beef cut into 2 inch pieces
- 2 Marrow bones
- 1/4 tsp. Caraway seeds ground
- 1/4 tsp. Turmeric ground
- 1/4 tsp. Cardamom ground
- 1 Potato cubed
- 2 Zucchini cubed
- 1 Tomatoe peeled
- 2 Scallions sliced
Bring 7 1/2 cups of water to boil and season with salt. Place meat and bones in pot. Remove scum.
Add spices and simmer for 2 hours or until meat is tender. Add vegetables and cook for 30 minutes or until tender.
Extract bones and scrape marrow into soup.
