Okra Stew with Meat Dumplings
Ingredients
- 1 lb. Fine semolina
- 1 lb. Ground beef
- 1 Onion grated
- 2 Dried limes
- Salt and pepper
- Flour
- 1 Onion chopped
- 2 Tbsp. Oil
- 2 Garlic cloves minced
- 3 oz. Tomato paste
- 1/4 Cup Celery leaves chopped
- 1/4 Cup Flat leafed parsley or coriander chopped
- 1/2 Lemon juiced
- 1 tsp. Sugar
- 2 lbs. Okra small, tender
Instructions

Put semolina in bowl with 1/2 teaspoon of salt. Moisten with enough water to make a firm paste. Dough should be doughy and elastic.

Mix meat, onion, ground dried limes, and pepper.

Dust your hands with flour, take a walnut-sized lump of dough, roll into a ball, and flatten thin between palms of hands.

Place a teaspoon of filling in center, bring dough over filling, and close gap.

Fry onion in oil til golden. Add garlic, and rest of the ingredients and enough water to cover dumplings when they are added.

Bring to boil and simmer for a few minutes. Drop dumplings very gently. Cook for about 25 minutes or when dumplings become soft and float.
