- 1 lb. Chickpeas soaked for at least 60 minutes
- 1/3 Cup Extra virgin olive oil
- 1 Lemon juiced
- 1 tsp. Cumin
- 1/4 - 1/2 tsp. Cayenne or chili pepper
- 3 Garlic cloves crushed
- 4 Tbls. Flat leafed parsley chopped
Drain chickpeas and boil in new water for 90 minutes or until tender. Add salt when they have softened.
Drain and mix the rest of all the ingredients together.
