Tomatoes Stuffed with Cheese
Cut a little circle around stem end of each tomato. Slice a lid and set aside.
Scoop out seeds. Place tomatoes in an oiled baking dish, cut side up and season lightly with salt and sugar.
Mash feta, add cottage cheese, eggs, nutmeg, mint, and pepper and mix well.
Fill tomatoes with mixture. Put on tomato lids and bake at 400°F (200°C) for 30 minutes, until tomatoes are soft.
